To adjust it to my family’s tastes, I changed the recipe some.
I doubled the bacon, mushrooms and cheese, because what’s better than some bacon, mushrooms and cheese? MORE bacon, mushrooms and cheese. I SKIPPED the apple part because, I don’t do sweet and savory….it’s one or the other ONLY. I used vegetable broth instead of wine because….I had veggie broth already open in the fridge and I drank all the wine the night before. Also, I used more broth and 3 cans of cream of mushroom soup because I added more veggies and I like my pasta extra saucy. I crumbled 6 pieces of bacon and mixed into the sauce and reserved the other two pieces to sprink onto the top. I also pulled the chicken breasts out of the sauce after they were cooked, sliced them and placed them on top of the pasta that I had already tossed with the sauce.
I served it with bags of steamed mixed veggies and Parmesan & herb focaccia crostini. It was delicious. Gay Cop and his wife came over for supper and they loved it. Both of my children loved it as well.
